Griddles - Stove Top Griddle or Electric Griddle? What to Consider Before Buying a Griddle.
In order to cook really great pancakes you need a pan with good heat conductivity and an excellent nonstick coating. You can use a frying pan, but chances are your frying pan is used for every thing and is not in the best of shape. A well made griddle is the answer to better pancakes. You can cook with a stove top griddle or an electric griddle - both have advantages. The stove top griddle will typically get hotter than most electric griddles, which is important if you like the edges of your pancakes really crisp. Electric griddles are convenient because you can cook the entire breakfast at one time and not get grease splatters on the stove.
If you decide upon a stove top griddle, look for one that is well made with a really good nonstick coating. Light weight griddles can warp. If a griddle warps, the base will no longer lay flat upon the stove which is critical to cooking evenly. Griddles with an aluminum core will conduct heat best and leave fewer hot spots to provide more even cooking. If you will be cooking for more than two people you may want to consider a double burner griddle which straddles two burners on the stove.
If you decide upon an electric griddle, look for one that heats up to at least 400 degrees and has at least 1400 watts of power. Look for a well made electric griddle that comes with a one year warranty or more from the manufacturer. Also for ease of clean up, be sure the electrical components detach from the cooking base so the base can be immersed in water.
